Palak Baingan / Eggplant-Spinach

INGREDIENTS:
Egg plant / Baingan diced (2 cups).
Spinach / Palak chopped (4 cups).
Salt to taste.
Bori (Dried lentil paste).
Dried red chili (2-3).
Oil for cooking (2 TBs).
Red chili powder.

PROCEDURE:
Heat oil in a pan and fry brinjal to golden brown by adding salt to it, after frying keep them aside.
Now in remaining oil add dried red chili and saute them golden brown, add spinach, salt and chili powder and saute in closed.
Cook till spinach is cooked well and oil leaves the walls of pan.
Now add fried brinjal and fried bori to it and stir up well.
Do not add brinjal in before hand as it may get mashed up.
Our spinach-eggplant is ready to be served and enjoyed.
