Koshe Kosha(Mangsho) Mutton

                                               MUTTON GRAVY

INGREDIENTS:
 Mutton pieces neatly cut (500 gms).
Curd (200gms).
Onion (2 diced, 4 chopped).
Tomatoes (4 chopped).
Garam masala powder (2Table spoon).
Cumin powder (1 Table spoon).
Coriander powder (2 Table spoons).
Chilli powder (1 Table spoon(as per requirement)).
Kashmiri mirch powder (1 tea spoon).
Ginger-garlic paste (3 Tablespoons).
Salt to taste.
Garam masala whole ( clove, cinnamon, cardamom).
Mustard oil
Potatoes (3 cut to half and shallow fried).

PROCEDURE:

Marinate mutton pieces with curd, diced onion, ginger-garlic paste, cumin powder, coriander powder, chilli powder,turmeric powder, salt, 1TBs of oil, 1TBs garam masaal powder for 30-60min.

Now heat oil in a kadai fry onions and add 1/2 TBs of garam masala powder, sugar, tomatoes and add the marinated mutton to the kadai and cook it in simmer when oil leaves from the walls of kadai now transfer all the contents into a pressure cooker and add water and cook it for 7-8 whistles as per tenderness of mutton, and then add fried potatoes into the pressure cooker and after 1 whistle  and add remaining garam masala powder, remove it from pan. Finger licking kosha mutton is ready to be served with hot roti, rice, pulao, paratha.
